The new classes at Cookery School at Little Portland Street will run in conjunction with Honey Sommelier and co-founder Sarah Wyndham Lewis of Bermondsey Street Bees, a sustainable beekeeping practice. The classes will cover the history of bees and honey as well as teaching students how to cook with the sweet and savoury qualities of honey in both food and drink. The art of making honey cocktails as well as the ancient tradition of how to infuse honey with spices and herbs will form part of the day. Recipes on the day include :
- Fish with a herb and honey crust
- Salad with honey dressing
- Honey spiced cupcakes with a honey flavoured cream
- Honey infusions as store cupboard staples and natural home remedies
- Honey cocktails
- The principles of pairing honey with chocolate
Sarah Wyndham Lewis is also a Great Taste Awards judge and trainer, speaking on a wide range of honey and sustainability topics. Her book 'Planting for Honeybees' was published in 2018. “UK beekeeping has been demoralised and largely demolished by the cheap, blended 'world honey' imports sold in supermarkets, many of which are so highly processed they are no longer true honey.
“Consumers can make important buying decisions by buying raw, single source honeys from UK artisanal honey producers. It's fundamental to our work as sustainable beekeepers that we help educate consumers on how they can help via their buying decisions and thus provide support for the declining UK honey consumption.“

The classes begin with a breakfast which includes a lavender honey shortbread. Following the morning session lunch is served with an optional glass of organic wine and the masterclass ends with a honey and chocolate pairing. Students will take home honey cupcakes and a wealth of knowledge and new skills.
